CILANTRO LIME SHRIMP WITH ZUCCHINI NOODLES

Ingredients:

1 lb (450g) shrimp, shelled and deveined
2 + 1 tablespoons olive oil
4 cloves garlic, minced
1 pinch red pepper flakes (optional)
1/4 cup vegetable broth
1 teaspoon honey (optional for low-carb, keto diet.)
Juice of 1 1/2 lime
3 medium zucchini, spiralized or cut into noodles
Salt and fresh cracked pepper to taste
1 teaspoon lime zest
2 tablespoons cilantro, chopped
How to Make It:
1. In a bowl, combine 2 tablespoons olive oil, garlic, red pepper flakes, 1 tablespoon cilantro, honey, lime juice and lime zest. Add uncooked shrimp and toss to mix well. Marinate for 15 to 20 minutes.

 
2. Heat 1 tablespoon olive oil in a pan over medium-high heat, add the drained shrimp, cook for 2 minutes, flip, and add the marinade. Cook for 1 more minute and set the shrimp aside.

3. In the same skillet add vegetable broth to deglaze and simmer for 2 minutes. Add the zucchini noodles and cook until just tender, about 2 minutes. Add the shrimp and adjust seasoning. Toss everything and serve immediately topped with additional cilantro, enjoy!

Cheesy Zucchini and Chicken “Enchiladas”

Ingredients:

2 tablespoons vegetable oil
4 scallions, sliced (white and green parts separated)
2 cloves garlic, thinly sliced
1 tablespoon chili powder
3 cups shredded rotisserie chicken (skin discarded)
1 1/2 cups salsa (not chunky)
1 cup shredded Mexican blend cheese
3 to 4 medium zucchini
Several dashes chipotle hot sauce, plus more for serving, optional
2 tablespoons sour cream
How to Make It:
1. Preheat the oven to 375 degrees F.

2. Heat the oil in a large skillet over medium heat. Add the scallion whites and garlic and cook, stirring frequently, until soft, about 5 minutes. Sprinkle in the chili powder and cook, stirring, until the scallions are coated and the oil is brick red, about 1 minute. Remove from the heat and stir in the chicken, 1/2 cup of the salsa and 1/2 cup of the cheese. Set aside.

3. Halve the zucchini lengthwise and arrange cut-side down on a work surface. Use a Y-shaped vegetable peeler to shave off ribbons the entire length of each zucchini and as wide as possible (the first few may be too skinny). Make 36 zucchini ribbons total.

4. Lay out 3 ribbons, slightly overlapping to make a rectangle (think of this as your "tortilla"). Pile about 1/4 cup of the chicken mixture down along one of the short ends of the zucchini tortilla and then roll up to enclose the filling. Put in a 2- to 3-quart baking dish. Roll up the remaining zucchini ribbons and filling and arrange in the dish. Top the rolls with the remaining 1 cup salsa. Add several dashes of the hot sauce and sprinkle with the remaining 1/2 cup cheese.

5. Bake until the cheese is melted and the filling is hot, about 25 minutes. Let cool for a few minutes. Thin the sour cream out with a little water and drizzle over the enchiladas. Sprinkle with the reserved scallion greens and serve with more hot sauce if you'd like.

Lemon-Pepper Salmon

Ingredients:

2 tablespoons butter
2 tablespoons olive oil
4 (4 ounce) salmon steaks
1 teaspoon minced garlic
1 tablespoon lemon pepper
1 teaspoon salt
¼ cup water
1 cup chopped fresh tomatoes
1 cup chopped fresh cilantro
2 cups boiling water
1 cup uncooked couscous
How to Make It:
1. Heat the butter and olive oil in a large skillet over medium heat. Place salmon in the skillet, and season with garlic, lemon pepper and salt. Pour 1/4 cup water around salmon. Place tomatoes and cilantro in the skillet. Cover, and cook 15 minutes, or until fish is easily flaked with a fork.

2. Bring 2 cups water to boil in a pot. Remove form heat, and mix in couscous. Cover, and let sit 5 minutes. Serve the cooked salmon over couscous, and drizzle with sauce from skillet.

Stuffed Zucchini

Ingredients:

6 medium zucchini (about 3 lb.)
3 tbsp. olive oil, divided
1 lb. mild or spicy Italian sausage
1 small red bell pepper, diced
2 cloves garlic, minced
1/4 tsp. crushed red pepper flakes (optional)
1/2 tsp. kosher salt
1 tsp. chopped fresh oregano, plus more for serving
2 tbsp. chopped fresh basil, plus more for serving
2 c. marinara sauce
1 c. shredded mozzarella cheese
1/2 c. grated parmesan cheese, divided
1/2 c. panko breadcrumbs
How to Make It:
1. Preheat the oven to 425°.

2. Halve the zucchini lengthwise. Use a spoon to scoop out the interior of the zucchini (reserving the flesh), leaving about 1/4-inch-thick border around the edges. Arrange the zucchini boats on a parchment-lined, rimmed baking sheet.

3. Chop the reserved zucchini flesh and set aside. Heat 2 tablespoons of the oil in a large skillet over medium-high heat. Add the sausage and cook, stirring to break up the sausage, until browned and crumbly, about 6 minutes. Add the chopped zucchini flesh, red bell pepper, garlic, red pepper flakes, and salt. Cook until the vegetables have softened, about 5 minutes. Remove the skillet from the heat. Stir in the oregano, basil, and marinara. Let cool 5 minutes. Stir in the mozzarella and 1/4 cup of parmesan.

4.Divide the filling mixture evenly among the zucchini shells. Stir together the panko breadcrumbs, remaining 1/4 cup parmesan, and remaining 1 tablespoon olive oil in a small bowl. Sprinkle evenly on top of each stuffed zucchini.

5.Bake on the middle rack of the oven until the breadcrumbs are golden brown, cheese is melted and zucchini is tender, about 20 minutes. Serve with additional chopped fresh herbs.

Easy Taco Salad

Ingredients:

1 tbsp. vegetable oil
1 lb. ground sirloin beef
1 1 oz. package taco seasoning
1 15 oz. can black beans, drained and rinsed
1 head romaine lettuce, chopped
1 c. grated cheddar cheese
1 c. halved cherry tomatoes
1 avocado, diced
1/2 c. sliced red onion
1/4 c. chopped cilantro leaves
3 limes, halved
For serving: tortilla chips and sour cream
Optional: thinly sliced jalapeño or hot sauce 
How to Make It:
1. Heat the oil in a large skillet over medium-high heat. Add the meat and cook for 6-7 minutes, breaking it up into small pieces with a wooden spoon. Add 2/3 cup of water and the taco seasoning mix. Stir well to combine. Add the black beans and stir gently to combine. Cook until the beans are warmed through, about 3 minutes.

2. Divide the lettuce among serving bowls. Top with grated cheese, the meat mixture, tomatoes, avocado, red onion, and cilantro. Squeeze a lime half all over each salad, then dollop with sour cream. Add some fresh jalapeño slices or a dash of hot sauce if you like. Serve with tortilla chips.
